Watermelon & Cucumber Salad- Recipe

A light and refreshing side dish combining cubed watermelon and fresh, chopped cucumbers with minced mint leaves using our Honey Vinegar and Sicilian Lemon or Basil Genovese Olive Oil.

Yield: 4-6 People
- 3 cups Watermelon, cubed
- 1/2 Cucumber, chopped
- 10-15 Mint Leaves, minced
- 2 Tbsp Honey Vinegar Balsamic
- In a bowl combine all the ingredients and toss.
- Allow to sit in the fridge for at least an hour, stirring occasionally, for the flavors to marry.
