Ingredients

  • 1 pound (16 ounces) sharp cheddar cheese, freshly grated*

  • 1 tablespoon Sun-dried Tomato Balsamic or Chianti Wine vinegar

  • 3 tablespoons diced pimentos

  • ½ cup dried cranberries, roughly chopped

  • 1 cup mayonnaise

  • 1 tablespoon sugar

  • Salt and pepper to taste

Directions

  1. Thoroughly mix all ingredients.

  2. Refrigerate overnight to let flavors meld.

* Note: You can use a food processor to quickly "grate" your cheese — just chop into 1-inch cubes and lightly pulse until crumbled. For best results, avoid shredded cheese or pre-cut cubed cheese.
