Panella ( Sicilian Chick Pea )- Recipe
Panella (also spelled panelle and panelli) is a Sicilian savory fritter made with a finely-ground flour from ceci or chickpeas. Fried panella are eaten as is or multiple slices are piled in a sesame roll and enjoyed as a sandwich. Panella are crisp on the outside and tender on the inside. We like dipping them in a little warm tomato sauce.
1.5- cup Water
1 cup coarse Chick Pea flour
2 Tbsp Mediterranean Rosemary Seasoning
1 tsp Australian Sea Salt
1/4 fresh parsley
1/4 diced red onion
2 tbsp. Greek or Spanish Olive Oil
First, Cook chick pea flour, water & salt on stove top til medium thick consistency.
Take off the heat and add rest of ingredients
Place in tin or ceramic dish- 1" thick
Dizzle on top Traditional Olive Oil
Refrigerate till firm
Pan fry after dusting in flour and cutting in to squares.
Serve in Pita, on top of salads etc
