Raspberry Balsamic Fruit Tart- Recipe
1.5 cups fresh fruit of your choice
8 oz Cream Cheese, room temp
2 Tbsp Sicilian Lemon EVOO
2 Tbsp+ extra to drizzle Vine-Ripened Raspberry Balsamic
2 Tbsp Confectioners Sugar
1 tsp Vanilla Extract
2 sheet Puff Pastry, thawed
1 egg or Tbsp Sweet Cream Butter Olive oil
2 Tbsp Cinnamon Vanilla Sugar
Preheat oven to 400 degrees and line a rimmed baking sheet with parchment paper.
Combine the cream cheese, olive oil, balsamic vinegar, sugar, and vanilla extract in a standing mixer.
Place thawed puff pastry on baking sheet. With a paring knife, lightly score 1 inch from the edge to make a square border within the pastry dough.
Transfer cream cheese mixture to the pastry and spread evenly within the border and top with assorted fruit. Brush along edges of pastry dough with egg yoke Or Sweet Cream Butter, then sprinkle with the Vanilla Cinnamon Sugar.
Bake for 18-20 minutes, until the pastry has puffed up and is golden brown.
Serve with a drizzle of the Raspberry Balsamic and a sprinkle of Vanilla Bean Sea Salt.
